Chef Subash Ghimire, the creative mind behind MONACO Bowral, began his culinary journey in a small town in Nepal, where his mother sparked his passion for cooking. After earning a degree in Hotel & Catering Management in Kathmandu, he refined his skills in prestigious kitchens like the Hyatt in Dubai and the Palazzo Versace, mastering French and European cuisines. As a task force chef, he also helped open restaurants across Africa, broadening his international experience before moving to the Southern Highlands in 2016. In 2023, Chef Subash fulfilled his dream of opening MONACO Bowral, where he combines his Nepalese heritage with global flavors and French elegance to create a unique and unforgettable dining experience.

We made a spontaneous decision to have lunch here today (3) while doing the art walk and can thoroughly recommend! We had crab linguine, mushroom tagliatelle and the beef cheek. The food was great and the service was lovely. We will be back!

This was our third meal at Monaco Bowral in 2024. This time we had pasta, Lamb Tortellini and Crab Linguine. Both dishes were delicious. The crème Brûlée was also a real treat. Service was friendly and attentive. We will continue to eat here on a regular basis.
Service and food were both excellent. Despite the wet, miserable day when we dined, the lovely outdoor area at the back added charm. Good French wines are available. Highly recommended for a delightful dining experience.
